Brainstorming is a great, open-ended activity that can be used for many teaching objectives. Assessing student prior knowledge, consolidation, review or just language enjoyment and fun.
Give students an organizer or blank piece of paper and some short instructions / a topic and see what they know! Set a time limit in advance.
Many vocabulary games operate with brainstorming as the core. Feud, Name X things, Scattegories and more …
Here is another one. Alphabet Race. Students are given a topic (animals, names, transportation, adjectives, food etc …) and have X time to fill out a word related to the topic for each letter of the alphabet.
